Use online billpay at your bank to send a payment to American Express--it's usually sent electronically. (If your bank doesn't offer free online billpay, change banks--plenty offer this service for free now.)
Or mail a check to the usual address. I used to make copies of the payment stub so whenever I wanted to make a payment I'd send a payment stub copy with my check, without having to wait for the actual statement to arrive. But online billpay is much, much easier.

I make 2 or 3 payments per month on Amex through their website. It's always PIF before the reporting date and statement cut.
You just can't do it for your 1st statement. After that you can make a payment on their website anytime you want.
